I'd cut the dairy for several weeks. It takes nearly 2 weeks to get it all out of your system. Honestly, I would do a complete cut (ALL dairy) and then re-introduce something lactose free (lactaid milk or hard cheese) and see how it goes.
If it is still a problem, then it could also be a dairy protein issue (intolerance or allergy, more likely intolerance if it affects the gut etc.).
A couple gallons a week is a LOT of milk, and yes, too much milk CAN be a problem. Calcium can block the absorption of other essentials like iron.
Milk is not critical. the fat and protein and calcium can be derived from other sources.
For the pp who mentioned soy issues when off of dairy ~ 50% of dairy reactive kids also react to soy.
Give it a break and see what happens. Be sure to cut all dairy sources (casein, whey and lactose in butter, cream, milk, cheese etc...) and read labels. The Kids with Food Allergies Network has some good charts of label reading help.
