If you're worried about sinking, get a couple of layers of wool felt (the larger Joann's have the 100% stuff and you can use the 50% off coupons on it) and put them between the mattress and the sheet. It will provide enough support to keep your LO from sinking (unless they're huge) and add in a lot of breatheability... and some waterproofing!

I don't worry about spinal development--I figure babies across the world sleep on all sorts of different surfaces, and they somehow manage to be upright and functional adults.

I do worry about off-gassing--we just got a new memory foam mattress from Costco online, and the thing did have an odor the first few days. I'm hoping by the time DD2 is born the smell will have mostly gone away, but then she's also not going to be sleeping face-down or in direct contact with it. I figure that if a week later, my ultra-sensitive pregnancy nose doesn't smell anything, it's not HUGELY toxic (but that's just my uneducated opinion), and we can't afford latex.

I think the toppers are a lot different than having an entire foam mattress-- we have a topper and there's no "sinking." DS coslept with us from birth to 9 months and he didn't sink in at all.
