Mmmm... Spanish Tortilla, so good, so cheap (added pic)

Love this recipe. Something about the potatoes along with Peppers and onions and parsley... yumm!

I adapted this one. I added red peppers and parsley, and did the finishing it in the oven thing instead of flipping. I think I didn't use quite the full amount of oil, though it does take a lot because of the potatoes.

That does sound tasty! I'll bet most of the flavour comes from the olive oil -- did you use a high quality one?

I guess it is all relative, but I used a fairly nice one from Trader Joes. I'm sure that it is not super high quality, but yes I do think that definitely added to the flavor along with the sauteed onions and peppers.

Looks delicious! Tortillas are my favorite. It sounds odd, but they make a great middle to a sandwich. I'll definitely be trying the recipe out. Thanks for sharing.
