Vegetarian cookbook recs?

Other than Laurel's Kitchen and Moosewood. I have those already! We need some new ideas for dinner. Thanks!!

"The Vegetarian Mother's cookbook" by Cathe Olson
"The Enchanted Broccoli FOrest" by Mollie Katzen
"Simply in Season" by Mary Beth LIne and Cathleen Hockman-Wert (not exclusively vegetarian but it's a cookbook that focuses on cooking seasonally, LOVE IT!!)
"Fat-Free and Easy" by Jennifer Raymond
"Versatile VEgetarian" -- weight watchers
"Pretend Soup and other real recipes," "Salad people and more real recipes," "Honest Pretzels" all by Mollie Katzen -- these are awesome cookbooks for CHILDREN! they are simple w/ lots of hand drawn pictures and simple instructions but are really good too!

If you are open to Vegan I love "How It All Vegan" and "The Garden of Vegan" they have REALLY easy recipes that are great!

I love Veganomicon and Vegan With A Vegance. Both by the same author, and wonderful recipes for Tempeh and homemade Seitan. Also, Vegan Celebrations has an amazing recipe for nacho cheese sauce! My kids have no idea that it's not cheese

Thanks!! I am definitely okay with vegan. I am trying to return to being vegetarian after a year long hiatus while I was pregnant/since my baby was born. Hoping new recipes will help!!
