no actual recipe but i will post what i do!

Take the duck breasts and marinate in italian dressing for 1-2 days..this will turn the breasts almost white in the fridge.
Drain the marinade and slice into nugget size chunks.
Make a breading of flour, cornmeal, and spices to your liking (I use whatever is in front of me at the time LOL)
Dip nuggets in egg then put in breading and coat.
Then deep fry!
Enjoy!


Very very easy i got the idea from a guy i worked with at a sporting goods store. The main thing I've found is letting thebreasts marinade to get alot of the wild taste out and to make tender.

We like to dip ours in Country Bobs sauce

Ooooh, somebody said stroganoff.... after DS2 was born I had stroganoff in a freezer bag, crock pot ready, and it was SO yummy. I'll see if I can remember to dig up that recipe, 'cause it was so, i dunno, homecooked feeling!

I just started the freezer meal thing. What I did was go to the grocery store with DH and ask him what foods he liked in the freezer section. I now have a nice long list. I still have my casserole recipes too.

Ohh I even made a couple of frozen meals for pg friends so that I don't have to feel rushed the week they have their babies.

I do a monthly freezer swap with some moms in my local mommy group so I'll be saving those for sure. And definately chili, lasagna, shephards pie etc. Freezing homemade chicken nuggets is a Great idea.

I've been looking at the 'once a month cooking' website to get some ideas from there, as well as in the thrify families and in the kitchen forum sections on here. There are some great ideas, as well as things that you can really double triple quadruple easily to make more than one batch at a time.

I like to freeze stir-fry type dishes (pretty much any combo of meat and veggies cooked in a skillet with some seasonings like sesame oil and/or soy sauce) and rice in single servings. Makes for a good mommy lunch!

Dinners we do the usual: mac n' cheese, lasagna, enchiladas, etc...

oh wow.. those blogs give me some great ideas to do up. and stuff i can make ahead of time.

which will be super helpful. last time friends said they would do up freezer meals and such, and never came through for me. so we did alot of fast food and ick.
