Sorry guys, I had class earlier, and when I came home, I completely forgot about the recipe.

Here you go:

2 sticks softened butter (it HAS to be softened, and it has to be butter, not margarine)
1/2 cup powdered sugar
2 cups AP flour
1/2 tsp baking powder
1/2 tsp vanilla extract

My recipe says to combine by hand, but I usually use my paddle attachment on my mixer and beat the butter and powdered sugar, then add half of the flour/baking powder, add the vanilla, and then the rest of the flour. Be careful not to overbeat, or it the cookies won't be as melt-in-your-mouth tender.

Then I throw everything in the fridge for a bit, just til it's nice and chilled, and the roll it out about 1/2 inch thick and cut out rectangles. I bake them on my silpat, but since there's so much butter, you may not need a silpat/greased pan.

Bake at 350 for about 12 minutes. Watch closely for doneness after 12 minutes - if the edges are slightly, barely golden, they're done. My recipe originally says 325 and 20 minutes, but that's scratched out and I wrote in the 350/12 minutes. I had a wonky oven then and haven't made these cookies since we moved, so if your oven runs hot, try the 325.

I just stuck the dough in the fridge! The dough tasted yummy! Can't wait to bake them!

Oh I LOVE Panera's Shortbread!!! I haven't had one in like a year because of my dieting/weightloss. I could totally go for one right now though

Made them last night...they are SUPER close to Panera and REALLY good. DH says thanks! YUM YUM YUM!

I mixed some milk and powdered sugar and glazed them as well! Super yummy for breakfast!
