Need Mexican recipes!
my 30th bday party is 4/21 and I want to cook Mexican food! there will be ALOT of people, so I need rice recipes, etc..

I have a recipe for green chili rice that is really good. It's the recipe that we always take to potlucks and stuff like that.
Green Chili Rice 1 cup chopped onion 1/4 cup butter or margarine 3 cups cooked rice (I usually use Minute rice, but you could probably use others) 2 cups sour cream 1 cup cottage cheese 1/2 teaspoon salt 1/8 teaspoon pepper 12 oz chopped green chili (You can use the canned) 1 cup shredded cheddar cheese (I usually use a bit more though) Cook onion in butter until tender but not brown. Combine all ingredients except cheese. Put into 9x12 baking dish, top with cheese. Bake at 375 for 30 minutes. Hope you have a happy birthday!!! Brown a couple cups of rice in oil
Add a can of tomato sauce and water ( how ever many cups of rice you use, you will double that in water.) Season with chicken bouillon and garlic salt, and cumin. Cover and let simmer for 20 minutes. After the 20 minutes let it sit for another 10-15 minutes. **Do not take off the cover until that time is up** Pinto Beans: Rinse whole dry pinto beans and put into a crock pot, add a clove of garlic and a ham hock. I also like to add onion and bacon uncooked. Season with salt and let simmer for 6-8 hours on low. (Can be made the day before) When they are finished you can either refry them in bacon grease or eat whole. We like them both ways. I made this last night & it would be a real people pleaser & so easy!
I put about 1.5 lbs chicken breast into a crock & added 1.5 c broth & a packet taco seasoning. Cook high 4-5 hours. Then shread the chicken & return back to crock on low an hour. You can leave this as sort of a serve yourself & have taco stuff on the side. YUMMY I promise. Just ate leftovers

LOL I plan on doing chorizo con huevos and asadero cheese on the side, served on corn tortillas. dh LOVES this meal though it makes him gassy LOL For that rice recipe, thats similar to the one that I am wanting!! Can I just use those little seasoning packets? The sazon or whatever they are called? Any idea what I am talking about?

I know what you are talking about. I use the Knorr Chicken Bouillon, but I think that any bouillon would work. It comes out way yummy !!!
You could also make chorizo con papas which is made the same way as chorizo con huevos, but with potatoes. I have some yummy salsa recipes that are not just hot, but some that are really tasty !!

i dont have cumin though. how much do you use? do you use tomato sauce that has tomato chunks in it? like cut/diced tomatoes?

You can use either tomato, but you need the sauce to make it red. I like diced onion and tomato in it also, you just fry it in the beginning with the rice. You don't have to use cumin, but its only like $1 and its good to have on hand for tacos and fajitas. You can use about a tablespoon for as much rice as you are wanting to make.
Salsa recipe: 2 cans of whole peeled tomatoes (big cans) 1 bunch of cilantro 1 chopped onion 2-3 jalapenos Cumin Sugar Garlic Salt Chop the onion and put in a bowl on the side Put one of the can of whole tomatoes, the bunch of cliantro, and the jalapenos (just cut off stems and cut in half) in the blender. Blend until pureed. (It will turn green) Add to the bowl with onions Put the other can of tomatoes in the blender and do a quick chop just to chunk it up. I usually press that button that lets you do it in spurts, like once or twice, because you want this part chunky still. Add this to the bowl. Add 2 tablespoons of sugar, 2 teaspoons of cumin, and season with garlic salt to taste. The guys at the Fire Department ask for this all the time. Its really tasty. Nikki
