Re: Favorite non-dairy, non-soy milk to use for baking
I use almond for most things, pancakes, gravy etc but canned full fat coconut milk is fantastic for everything else. anything where you would use heavy cream or a cream of anything soup, or even sour cream it just works really well in. I LOVE canned coconut milk!

Re: Favorite non-dairy, non-soy milk to use for baking
how do you make the milks yourself? and is it cheaper? i get rice and almond milk for 3.99 sometimes 3.50 a container here in canada and hemp milk is 5.99 so i dont buy that one lol....coconut milk i can only find in cans and that can be kinda expensive too

Quote:
5 c water 1/2 c rice 2 tsp salt 3-6 TBSP sweetener of choice(OPTIONAL) 1 TBSP vanilla(OPTIONAL) cook rice, water and salt in pressure cooker 15 minutes or simmer in a pot until rice it very soft, about 30 to 60 minutes. Measure 1 1/4 c rice slurry into blender and 1 1/4 c water, blend on high speed 1 minute. Strain rice mixture through cheese cloth, repeat with remain rice slurry. On the last batch add 3 - 6 TBSP of sweetener and/or 1 TBSP vanilla. Makes approx. 2+ qt. I think it costs me roughly 12 cents to make 2+ quarts of rice milk

Re: Favorite non-dairy, non-soy milk to use for baking
After my success with a Marta Stewart Chocolate Cake recipe, I'm a fan of baking with the So Delicious Coconut Milk. Delicious!
