share your favorite recipes using dried beans/lentils
What's your favorite recipe for using dry beans? I usually buy canned beans for recipes, but have recently bought some bags instead. (white beans, navy beans, lentils and black beans)
Share your recipes that use beans!

The easiest wY to cook them is soak overnight, put in crockpot and cook on low all day. Now just throw them in anything...

Yep, soak over night and crock pot is what I do
BUT - if you're used to the convenience of canned foods - make it easy on yourself, cook 3-4 times what you need for whatever meal, then freeze the rest in portions that would normally equal "one can" They are quick and easy to thaw and you'll feel less impact of "crap I didn't soak my beans last night!" Or maybe it's just me that forgets But seriously, I haven't bought canned beans ever I don't think, I just freeze in 1 can portions and its so quick and easy

Re: share your favorite recipes using dried beans/lentils
great idea, Macy! Thank you SO much. Yes, I use canned beans a lot but hate buying stuff with excess packaging so the dried beans have been so appealing lately - I have about 8 bags of them now but have been too nervous to attempt using them...hahahaha...so making them and freezing is a great idea for me!

We need to do the cook & freeze thing. We forgot so often we started buying canned but dried is so much cheaper. We finally remembered to make our crock pot meal from this weeks plan only to read the recipe & it starts "soak beans overnight". Obvious but we forgot.
Anyway. 2 favorites. http://crockpot365.blogspot.com/2008...-soup.html?m=1 dinner tomorrow. We make it with mild sausage. http://www.food.com/recipe/cincinnati-lentils-36854. This we quarter and fry up some mild sausage with smoked paprika and chili powder to put in it. Yummy! Sent using DS Forum, please forgive typos

Re: share your favorite recipes using dried beans/lentils
We l-o-v-e my grandmother's lentil soup recipe
Pour boiling water over 1/2-2 c dry lentils. Drain after 15 minutes. Saute chopped onion, celery, carrots, and parsley (I leave this out) in olive oil until soft. Add drained lentils, bay leaf, 1 chopped tomato (or 1 can of diced tomatoes) and 8 c broth (ham, chicken, or beef - I do a combo of chicken and beef). Add chopped ham or sliced smoked sausage (we prefer the sausage. Cook 30 minutes longer. This makes quite a bit - I end up freezing a few containers of it so that we can easily thaw and reheat on another night. It's great with grilled cheese sandwiches or crackers.

Re: share your favorite recipes using dried beans/lentils
We love black beans here and eat them quite often. We soak the beans overnight, then cook as normal. Once the beans are nearly done we cut up fresh tomato, onion, and jalapeno (amount of jalapenos depends on how spicy you like your food) and saute them in a pan with minced garlic, salt, pepper, and ground cumin. Once the vegetable mix is soft pour it into the beans and continue cooking until beans are soft. Even the youngest kids love these and it is even better served over rice.
