Quinoa Recipes PLEEEASE!

I bought some quinoa from Whole Foods the other day and it's just been sitting in my pantry in the box. I have never used it before, and to be honest don't know how best to apply it in a meal? So spam me with your recipes for it pretty pretty please!

My family loves this one for breakfast. We use whatever dried fruit or nuts that we have on hand.

Ingredients:
1 cup (170 g) quinoa, rinsed well
2 cups (500 mL) water
1 cup (250 mL) vanilla soy milk
1/4 cup (44 g) chopped prunes
1/4 cup (40 g) dried blueberries
1/4 cup (33 g) chopped dried apricots (unsulphured)
1/4 cup (41 g) raisins
1/4 cup (37 g) chopped dates
1/2 teaspoon ground cinnamon
1/4 teaspoon ground coriander
1/4 cup (33 g) chopped Brazil nuts

Instructions: Simmer the quinoa in the water for 10 minutes. When water is absorbed completely, add the rest of the ingredients and simmer another 10 minutes until soy milk is absorbed.


We also make one for dinner that uses the same instructions as above and includes:
1 cup quinoa
1 cups water
1 cup milk
variety of veggies (broccoli, carrots, peas, corn, etc)
Top with some shredded cheese or feta.
My kids prefer the quinoa when it is creamy.

Cook quinoa in chicken broth or water. Mix in a can of corn, chopped red pepper, a few thinly sliced scallions, and some edamame. You could add some cubed baked tofu or sliced chicken to this. I like to marinate the tofu or chicken in soy sauce, sesame oil and crushed garlic then saute or bake. Great hot or cold.

simple breakfast...some cooked quinoa,rasins(or nanners),agave,cinnamon,'milk' (soy,skim,whatever) i make mine look like oatmeal.. i always keep some cooked and ready.. replaces rice wonderfully..so anything that calls for rice..even rice pudding!
