Ham and more Ham!
i overbought on the ham yesterday and now i have LOADS left over
![]() besides sandwhiches and ham/cheese eggs what else can i do with it??

Freeze some of it for next month. Then you won't be so burned out in a week or two.

put it in quiche, ham and scalloped potatoes, use it in potato soup. those are just the ones that come to mind at the moment. Freeze it in smaller amounts so you can just pull out a little at a time and use it that way.

I have a very basic quiche recipe from my MIL. I just tweak it a bit each time depending on what we have in the house.
I will say that for our family of 8, I now need to either make 3 or add a huge salad on the side. Believe it or not, all of our kids love quiche. 3 eggs 3/4 cup milk salt, pepper to taste pie crust cheese veggies, meat, whatever you want to add Pour all ingredients into a pie crust. Bake at 350 degrees for 45 minutes. Super easy, super cheap, and everyone loves it. Not a fancy recipe but maybe it will work for you. And this reminds me that I need to get the 2 containers of ham out of our fridge and separate them in smaller amounts for the freezer. |

I love making homemade bean & ham soup. I just throw in the ham bone along with some chopped ham - cover with water and add whatever spices you like. I love putting in whole bay leaves. Add some beans, carrots, whatever other veggies you would like - and simmer ALL DAY. I mash up the beans a bit before serving. I make enough that I can put several ziplock bags in the freezer and enjoy my homemade soup later. I have about 11 lbs of leftover ham - plus several pounds of leftover lamb and side dishes.
