I ended up using this recipe and it was excellent. Nice and moist. I made a round two layer with homemade chocolate butter cream frosting - it was great! There isn't much left today.

That sounds delicious! How do you make choc butter cream? Is that with melted choc?

You make a cake and then poke at it a bit and pour jello over and refrig. When it sets up you frost with cool whip. It is very tasty, especially in the summer.

Here is what I did:

I put one stick of room temp butter (real butta!) in a bowl, mixed it with my hand mixer until fluffy, added powdered sugar until well mixed, it will be a little chunky, then added two tablespoons of milk and blended again until it was whipped. I tasted as I went and kind of abandoned the recipe, once it was nice and fluffy I added unsweetened cocoa powder to taste. It came out great! It was SO easy. Some recipes call for vanilla but I had run out and it came out better without it IMO.

Good luck!
