Colorful food

Shortly after the holidays, I'm supposed to bring colorful food to work for a potluck (theme of colorful foods to help fight off the winter blues). Now some items came to mind quickly, such as:
-raw carrots/celery/colored peppers
-rainbow layer cake

But since I'm part of the organizing committee, we're supposed to take the less popular to bring but necessary category of main dish. Anyone have any ideas here? Other areas are good too, but main dishes are the big stumper. And bonus, any ideas you come up with will be fileable away for using on the LO in the future Thanks!

A big ham. With pineapple slices and cherries. So that would be brown, yellow and red.

Some sort of tricolored pasta or tortellini dish? Fajita fixings with red, yellow, and green peppers? Kebabs with the same? A main dish salad with all sorts of colorful veggies along with some sort of sliced rolled lunchmeats or chicken breast strips? Gazpacho soup?

Shepherds pie cooked in clear baking dish.
Quiche or egg bake with colorful vegetables.

Does each dish have to have multiple colors? I was going to suggest buffalo wings (orange). Maybe you could arrange different color wings on a tray--bbq, buffalo, sweet and sour--I got nothin' for green, blue, or purple. Well, maybe some sort of roasted potatoes.
