I like buying a bag of them about once a month to throw in with my stews (the marrow makes it sooo much richer) and a few rounds of stock. I'm a total crock pot fanatic, so I just let it sit there and die on low until my whole house smells like tasty beef stock. DON'T add flavorings until the last hour or so that it is on, including salt. I found that doing it too early can actually make it taste duller. The nice thing is when the bone is cooled its a nice treat for my pups.

Yep, make stock! You'll probably want to roast the bone first and then toss it in the crockpot with veggie scraps (onions/peels (organic), carrot tops, celery stalks/leaves, etc), cover with water, and cook on low for 24+ hours. Homemade bone broth is full of wonderful nutrients and makes any stock-based recipe taste *so* much richer in flavor!
