I have started to learn how to add more flavorful things to our food and he says it really helps him. I made a very tasty soup yesterday with lots of veggies and lentils. We had it with some cheese toast. We still do eggs and dairy but do not drink milk. Today I have black bean and corn layered enchilada type dish in the crock pot. I will serve it with a green salad.

ETA: I do fix something with chicken about once a week and fish twice a month. I have mostly figured out how to pull some out for me to have with out the meat though.

Hello everyone. I am Kate and I eat Primal but because of recent health issues my dh now eats no dairy (with the exception of my homemade ranch dressing), no meat other than a bit of chicken tossed in his stir fry or on top of a salad, and tries to be gluten, grain (except rice and quinoa), and bean free. Most of the time I don't know what to make for him. Because of gout attacks he is staying away from mushrooms and asparagus which are 2 of our former favorite veggies. Sometimes he is happy with a big salad and sometimes he likes a stir fry with rice and veggies. Last night I made him oven roasted broccoli and cauliflower and served them with gluten free (rice flour) rotini noodles that had been tossed with ranch dressing. I often feel like I am a short order cook and I hate that.

Ok. I can't find it either but when I make them I do carrots, medjool dates, walnuts/pecans + pumpkin pie spice in the food processor to make a dough. (i think in fairly equal paerts, just toss them in until it is a good consistency to roll) then I roll them in unsweetened coconut.

Anyone have a good bean ball recipe? I have an excellent butter bean burger recipes that I might just make into balls but I wanted to see if anyone had a good idea.

also I did find this :

and it uses vital wheat gluten. I've made seitan w/ it and I"m just wondering how chewy a 1/2 cup will make the bean balls...

I havn't made bean balls. I usually just do burgers and bake them. That recipe actually looks really yummy.
