Help me make my monthly menu!

Hey. I've decided that since I can never come up with meal ideas lately that I should get a menu set up ahead of time. I am clueless as to what to make though. I have a very limited menu stock in mind, and I'm wanting new ideas.

So......please tell me your favorite recipe that is pretty simple to make. I have a 2 year old and a 9 month old, so I don't have hours to spend in the kitchen. I would love some yummy meals that are healthy (for the most part) that can be whipped up without a thousand ingredients and will feed 4 ppl. I don't mind if there are leftovers, cuz then I can have like 2 leftover nights a week, which will give me breaks from cooking.

When we lived with my brothers family I did the cooking and I had to feed 6 people every night and one of my favorite and easy dinners was this:

Chicken Parmesan
I use boneless skinless chicken breasts and either leave whole or pound thin
I like to quickly fry them in a non-stick pan with Pam spray to seal in juices and make baking tme much faster
lay the breats in a lasagne pan and cover with your favorite spagetti sauce
sprinkle on parmesan cheese and top wiith grated mozzarella
cover with foil and bake for 20 min (if they were pre-fried)

It is so simple and kids love it. I sometimes top them with mushroom and onions then the sauce and cheese for some extra flavor. I also serve this with whole wheat pasta and a nice salad! Good luck Danni

I really suggest checking out the $5 meal thread and the crockpot thread, I've been able to go through those and come up with a TON of meal ideas. Some I've used as written and others I've altered to fit my needs or what we have in the pantry at the time.

Some of the ones I remember trying that were wonderful and easy are:
Peach Chicken
Plain Ole Potato Soup
Crockpot Lasagna
Chicken Fajita Stew
Homemade Mac n Cheese

I'm sure there are more, I just can't remember at the moment!

Meatloaf is something easy that can feed several people and still have left overs. You can also mix up which meats you use for it like ground turkey, ground beef etc. Chili is something easy and you can do turkey, chicken or beef in that. Beef stew is simple. Pizza kits are good, you can buy the cheap pack of dough mix and the different toppings you like. Tacos are easy. We love lasanga and it lasts us about 2 days plus lunches. Marinate some chicken breasts and cut them up over salad, thats one of our favorite heathy dinners. In summer we love to make kebabs (sp?) on the grill and make some rice with it. we even make skewers of grilled fruits and the kids love that, especially pineapple. Pot roast is another one that can make lots of left overs. Make a baked chicken and then take the left overs and make chicken pot pie, both of my kids LOVE pot pie. Make up a bunch of meat balls and you can use them with spaghetti, make meatball subs, even make sweedish style meatballs. Hope that helps some

Thanks! Those are great ideas. I just went to the store today and picked up chicken, ground beef, and steak. I figured those were 3 meats that would be helpful this month. Then I also got some seasoning packs. Oh and I can't forget spagetti and spagetti sauce.

Thanks! I will be making a small menu for this week, then I will do the same next week, until I get more use to the menu making.

I like to make weekly menu's that way I can see what's on a really good sale, and make my menu's according to that.
