Got a good fool proof bread recipe?

I would like to start making our own bread and completely cutting off store bought. I have a bread machine but not super impressed with the bread that I get from it(not the machines fault, I am sure). I would like to make some that freezes well so that I can have it on hand as needed. My kids go through a lot of bread.
Would you share your favorite recipe with me please? I am interested in all varietys of breads from white to wheat to whatever.

Love this recipe and use it for our everyday bread... I've made her 50/50 version, a 2/3 wheat, and 100% whole wheat version (modifications at the bottom of that page... I usually make it the second or third way listed). We like it every which way... I've used all honey and omited the brown sugar and that's good too. I also use coconut oil for the oil in the recipe. We have our own milk cow (thus lots of milk) and I use half water/half milk and it works well. I love making bread by hand, but if I'm in a time crunch, I'll put the bread machine on dough-setting and let it mix it up and rise. Then I'll bake it in our oven at 350 for 30 minutes. Oh, I also get a lot of requests for the recipe from friends who I'll bake it for so it's popular in our crowd.

I am a fan of sourdough. I often do the easy 1-2-3 no knead method.

I hand mix:
1 cup starter
1 cup water
2 teaspoons salt
3 cups flour

Cover and let raise 8-12 hours or overnight

Preheat oven to 475 degrees, placing a lidded pot to heat up with the oven (enameled cast iron works great- or any large pot that doesn't have plastic on lid)

gently remove dough from bowl onto floured surface and fold 4 sides into center
Put dough into hot pot and cover bake for 20 min, uncover and back for 20 more.

Here is an odd but useful video of this method:


I use rye flour in my starter and usually use 1/2 or so whole wheat flour. I also usually sprinkle the pot with cornmeal just before I plop in the dough to easy removal of finished bread.

Tastes great and I have only messed it up once. (My fault, accidentally put too much yeast and didn't think it would be that big a deal).

Check the Artisan Bread in 5 Minutes a Day book out of your library! No machines, literally 5 minutes. I've been doing this for over 2 years now!

How do you make the starter? I have always wanted to try sourdough.
