Yep you do brown them first. That way it takes off a lot of the fat.

Still need to write the receipe out. It's crazy busy over here.

I just put in our garden last Thursday so no canning yet here. Our strawberries are ripening but we only have a few new plants so I'm not expecting much from them this year. I'll go to a u-pick place and pick a few flats probably next week to freeze. I have so much jam from the past 5 years that I'm not canning any again this year.

Sorry I"m just getting back to this....I brown in the pan instead of oven..

Recipe: 3 lbs pork, 3 lbs beef, 3 pks dry onion soup mix = 5 quarts with 12-13 meatballs each. Process: Used a cookie dough scoop to make them uniform in size. Browned in the oven at 375 for approx 20 minutes. Packed into jar, added one beef bullion cube per jar, topped to 1" headspace with boiling wat...er, capped and processed at 10/11# pressure for 90 minutes.

Just, please, don't can anything with dairy, eggs, or plain bacon. It's so not safe. You can check out this site for the guidelines as to what has changed from when our moms and grandmothers used to can.

I'm going to get off my soapbox now that I know everyone is going to make things safely.
