I sometimes find when I double or triple my usual pancake recipe, it doesn't turn out. Not sure why, but it does seem to go that way. I have done several batches, consecutively, to get the same result of being able to freeze some pancakes.

My recipe is similar but not so much sugar and has oil in it.

1C flour
1T sugar
2t baking powder
1/4t salt
1 egg
1C milk
2Toil

I regularly double or triple this one and it works fine for us.

Oh mine does have oil . oh snap it was tsp sugar not cups. I used 4 cups sugar instead of 8 teaspoons.

Its in the fridge today looks separated.

Should I just toss it...

Yes, but I always use mine until its gone because its not sold in Germany

I asked my mom to send me some new. Mine is expired, but I did use it last month just fine in the same recipe.

LOL Holy moly sweet pancakes! I never really add sugar to my batter (figure the maple syrup will suffice for the sweetness factor) so I wouldn't be able to tell you how to fix it. I hope someone can help you!

Unfortunately, I would probably throw it out. I would have no clue how to salvage it. Maybe someone else has a suggestion.

if you add more flour and leavening maybe you could bake it into something that didnt really taste bad? and then maybe add some eggs, sausage, etc. to it to make a kind of casserole. sorry.
