Using up LOTS of eggs?

My in-laws have given us about 7-8 dozen eggs from their chickens. I really need to use these up (all but 1-2 dozen to keep on hand). I'm wanting to make freezer meals for when the new baby is born in July. I'm planning on making quiche, but thought I should check out what other freezer-safe recipes there are that contains lots of eggs! Thanks in advance! (And if you have a recipe you love, please share!!)

spinach rice cheese casserole (x2 makes a thin 9x13). i don't add the worchestershire sauce fyiw.

If you can't come up with enough ideas to use them, you can freeze them!

Mix 1 cup of very lightly beaten eggs (about 5 large eggs) with 1 teaspoon of salt and freeze for up to 6 months. To use, thaw overnight in the fridge. 3 tablespoons of the egg mixture is approximately 1 whole egg, and can be scrambled or used in pretty much any baked recipe calling for eggs.

You can crack the eggs into a non-stick muffin tray and then when they are cooked, use them in breakfast sandwiches (on english muffin with cheese and ham/bacon). You can then freeze the breakfast sandwiches.

Anything with coconut flour! Muffins, pancakes, bread, etc.
