Dinners with vegetable ideas.

Anyone have recipes they can send with dinners that contain a good amount of vegetables ( that isn't just a salad) . Its been very hard to get vegetables in and I would love to eat them at dinner. We do eat stir fry

Maybe chicken pot pie? You could add more veggies/less meat.

Vegetable beef soup
Stuffed cabbage/peppers
Crepes filled with broccoli and tomatoes topped with a cheese sauce
Sweet and sour chicken with broccoli/peppers/pineapple chunks
Kebabs
Chicken baked with mushrooms, zucchini and balsalmic vinegar/olive oil

How about just fresh veggies with ranch. I have started setting this out at each meal and my kiddo love it. Before they would not eat veggies!

We do roasted veggies with many meals each week. A little olive oil and sea salt really brings out the flavors. We do it in the oven or on the grill in foil.

We also do:
Tomatoes cut in half, rubbed with olive oil and herbs and then grilled

Tomatoes with cheese topping (tsp mayo, tbsp parmesan, 1/4 tsp basil, clove of garlic crushed - spread thinly on cut tomatoes and broil)

Butternut or acorn squash and peas in risotto or quinoa

Stuffed Peppers as a PP said

Roasted veggies and then black beans in tortillas for veggie burritos

Smashed sweet potatoes with nutmeg

Chard sauteed in olive oil with a pinch of salt and crushed garlic in a fave and sooo good for you

Thinly sliced zucchini (like with a veggie peeler) instead of noodles in lasagna works well

chunks of zucchini instead of meat in chili also is yummy - we crumble in cornbread, yum yum

Also, I make chicken pot pie filling with 2% milk instead of cream and then serve a ladleful over rice.

fried noodles is a favorite of ours. You can use any kind of fresh asian noodles, italian pasta could work but its not the same. If theres no packet like she uses just add garlic to the pan first to season the oil and add a splash of soy sauce at the end and mix it well until its exaporated. youtube). You can add as much of whatever you want. I usually do cabbage sliced fine, bean sprouts, onions, carrot, celery and whatever else is floating in the fridge that would work. Sliced thin enough the cabbage, onion and sprouts kinda disappear into the noodles if you have picky eaters.

When I make fried rice its literally half veggies.

broccoli beef, mushroom chicken, pasta primavera with a healthy sauce, make a veggie heavy pasta salad, kabobs, pan roasted root veggies.

Theres a paeleo pizza recipe on the web that uses cauliflower as the crust. Dont knock it till youve tried it! It wasnt bad at all just keep an open mind.

Vegetable soup with little meatballs in them , yummie!
Or make a beef stew in the crockpot with celery, onions, carrots etc & eat from it for a couple days.
