Oamc

Does anyone do the once a month cooking freezer meals? Do you have different menus for summer? I am trying this for the first time. I'm only doing 2 weeks to start. I also had to come up with my own menu because all the ones i found in the book or online had mostly oven meals and we don't have air conditioning. Please feel free to share your menu ideas.

I do the Once a Month Mom menus sometimes. But my family are picky eaters so I usually can't do the whole menu she sets out. She does have a series on how to create your own freezer cooking menu with recipes you know your family likes, and I've used it before to great success.

Some of her recent non-oven recipes have included Caesar chicken sandwiches, buffalo chicken sandwiches, Thai Peanut Noodles, Ranch Cheddar Burgers, Sweet Mustard Roast, and Slow Cooker Pulled Pork. She usually has at least 1 crock-pot recipe each month, and sometimes more. She also includes a couple of breakfasts & lunches in each big menu.

ETA- it looks like her June Mini-Menu is all about grilling

My menu this next two weeks are:

Taco salad
Wet burritoes
Hamburgers* (on the grill)
Speghetti
Crockpot shredded chicken sandwhichss
Chicken fajitas
Chicken salad with potatoes
Crockpot porkribs and rice
Shredded pork sandwhiches
Homemade pizzas

The only one that uses the oven is the pizzas.

Ok well for the meat mixture to make ahead of time for eating family of 5.

1.5lbs of hamburger (makes leftovers)
1 package of burrito seasoning (or make ur own)
1 can of refried beans

Brown the beef, add seasoning as directed on package then add refried beans and heat a little longer until mixture is warm. Put into a freezer bag or container.

For sauce
2 reg cans of tomato sauce
1 sm can of tomato paste
1 package of enchilada seasoning
1/2 cup of beef broth

Put all ingredients into sauce pan and stir while heating until well combined. Heat until warm. Put in freezer container.

Day of meal.

Shredded cheese
Shredded lettuce
Tomatoes diced
Burrito soft shells

Put beef mixture into shells, fold into a burrito put on plate, add sauce and cheese. Microwave until cheese is melted and beef is warm. Then add lettuce and tomato

I don't have any links right now, but if you google search crock-pot freezer meals you'll find several good ones. They either require cooking in crock first or prepping and freezing.Then dump in crock on cooking day. You can pretty much take any meat in marinade recipe that you'd crock pot cook and freeze prior to cooking- then dump it in the pot. There is a fajitia recipe that should come up that is pretty good. The veggies aren't crisp because they are cooked in crock pot, but still good. You can cook ham in the crock pot- I have done it and I might not ever do one in the oven again. Just put the ham in and added our regular glaze and pineapples- it was excellent. Then there are always the pulled meats that you can cook in the crock, shred, sauce and freeze.

Finished all the meals. It took 6 hours but everything is in the freezer. This minute i think i hate oamc but we will see what my thoughts are over the next two weeks
