Stainless steel is really good at not sticking if the pan is hot enough. I like the basic ones I have from Ikea, I think the line is called 365 or something.

I like the porcelain enameled cast iron pans. I made omelets for everyone this morning. Not one omelet stuck. I did oil with olive oil. I do heat the pan, and then heat the oil before adding the food. This seems to make food less likely to stick.

I like the Lodge pre-seasoned cast iron. I still had to do a bit of my own seasoning (used coconut oil), but my skillet is non-stick enough to easily fry eggs in. Anything messy, like cheese, just wipes right off. I do have to be mindful when I wash it not to use too much soap, if any, but I will never buy any other type of pan again. There are lots of options for sizes, and they have enameled cast iron pots and dutch ovens that are very nice too. I love that I can use them on the stove, in the oven, or over a campfire.
I can't comment on whether their manufacturing process is eco-friendly, but the cast iron and enamel don't emit harmful gasses or particles into your food. Here's a site with some info about why cast iron is a good choice: http://www.sustainablebabysteps.com/...-cookware.html

cast iron and SS are my faves. Mostly the cast iron, though I'd love an enameled dutch oven
