Ricotta cheese?

Any ideas for Ricotta besides lasagna, baked ziti, cannolis, and calzones?

Half of the recipe book DF's mum gave me has recipes with ricotta, which sucks because I'm allergic. Let's see:
Spinach Sausage Pie
Easter Pie
Stuffed Tomatoes
Stuffed French Toast
Lemon Ricotta Cookies

What kind of recipes are you looking for?

Anything except the above that I mentioned in my OP since we don't really feel like eating them; just trying to find ways to use up all this extra Ricotta cheese we have in the next few days. Although I suppose we could just eat it like yogurt, kinda, my son does really like it plain and I think my daughter might too...

Whatever recipe you use I highly recommend trying to make your own ricotta it was super easy and tasted so amazing! I swear I'll never buy store bought stuff ever again.
You can find directions online but basically you take a half gal of milk bring to a boil add some lemon juice and cook it till it makes curds then use some cloth to strain it. It was really easy and tasted wonderful. I liked the little hint of lemon the cheese had.

I love that. I do it all the time. Use whole milk.


Op make a dip for veggies....mix in some basil, rosemary and parm cheese. Yum!
