Canning diced tomatoes soon, how to weigh?

Ok so I see most tomato canning recipes measure the volume by weight. How does one weigh out 45lbs of tomatoes!! Obviously you can't do that on a kitchen scale. Do you weigh yours on your bath scale?

also can you cut the recipe in half? I could easily can in 20ish lb batches this early in the season but I know 45lbs all at the same stage of ripeness won't happen till late season.

You can use a bathroom scale, but make sure you zero your scale with whatever container you are going to weigh them in. You can use a kitchen scale and just weigh up smaller batches

I've even cut it down to 1/4 of the recipe and it worked out great since I have a very small kitchen and can't do a whole bunch at once. And can you imagine how long it would take to peel 45 lbs of tomatoes, unless they were big ones?

Duh why didn't I think of that.

I don't even want to think about peeling that many. LOL! Good to hear you can cut it down. I didn't realize I'd need lemon juice in order to process without a pressure cooker so I'll have to wait a bit. I did the weigh myself, weigh myself WITH the tomatoes thing on the scale and I have about 7lbs tomatoes so I'll hold out for a few more lbs before I try to can any. I have a bowl on the patio finishing up ripening.

That's too much work for me and I wouldn't get on the scale anyway.

LOL! Well I was pleasantly surprised that I'd lost some weight. Probably due to all the time I've spent outdoors working and just plain having no appetite due to the heat!

Can you use citric acid in place of lemon juice when canning tomatoes??? I think I read some where that you can.

The bottled lemon juice has a consistent acidity level and doesn't add any taste to the tomatoes. I have never heard of using citric acid, so I'm not sure about that. I'll check with a friend of mine that's a Master Preserver (I wish we had that class around here so I could know what I can change around in canning recipes and still have them safe).

IDK my recipes call for bushels or pecks not weight. And I don't have a scale to weigh them on.
