I would get the flats. They do wash up fantastically, plus I am too cheap to pay for sbish. You could get a lot of flats for the price of on sbish...

I would get a dozen flats and a couple SBish to try and then decide. If you have a toddler that has 'ploppable poop' (Sorry gross I know!) flats would probably be fine, but I know for me that if I tried to put my 2 1/2yo in flats with wool, I'd end up throwing a tantrum after scrubbing out woolie after woolie (he's got terrible toddler poop despite daily probiotics). I could absolutely handle using wool on him if I had fitteds. I can't even hardly handle using Flips w/ prefolds/flats on him right now because of cleaning the toddler poop out of the elastic of the cover. I am experienced with flats but because of how active he is even fastening them nicely and trying to put them under a PUL cover, he leaks on them at least twice a day when he goes. If your son is at all like that I'd think you would have to have a lot of wool covers.
I know you are a very busy mama Michelle and while flats sound really nice because of the simplicity, personally I'd suggest at least trying some fitteds out (maybe a couple SBish, a couple Sandies?). When I did flats + wool soakers on my now 4yo when he was a toddler, I had to have 5 covers for him and usually ended up washing at least one of them daily from a poop leak. It was a bit frustrating with all the folding and scrubbing wool, but it was literally the only thing that didn't give him massive welts. It is do-able, but not fun. HTH

hmmm, so true. I'm one of these people that has a fit if poo gets on a cover so can't stand to trifold.. I'm not so sure I could handle the wool/flats thing with his food allergies and poos. Good point, I hadn't thought it through in that direction yet. And since he has to be in wool I do think I aught to look at some easy fitteds. I think I'm going to go with some sbish and a couple sandies along with prefolds for backup on wash days. Thanks for all your advice mamas, it really did help me out
