I roast them with other CSA root veggies (carrots, potatoes, radishes, beets, onions, garlic). Just add a little olive oil, salt and pepper, cover pan with foil to seal in the steam so they cook faster, 400 degrees for about an hour. They lose the bitterness this way, and are often the first thing picked out from the tray when I take this dish to potlucks.
