What can I cook with black bean broth?

I just cooked a whole ton of black beans and I would like to use the black bean broth to cook something else. I thought of maybe making some rice in the broth or perhaps a soup. I can't find a recipe for soup and I am not sure what to put in it.

Some other ingredients I have on hand:
peppers
onion
escarole
arugula
asparagus
cauliflower
romaine hearts
cherry tomatoes
garlic
basil
tofu
seitan
shrimp
tilapia
diver scallops
rice
quinoa
Various fruit
Basic baking and cooking ingredients

So, any ideas? What would you make?

Oooh, I would totally saute some onion and peppers, then saute rice until translucent. Add the bean broth to cook out, then add some of the seafood with maybe basil and then some chopped tomatoes towards to end for some fresh burst. Do you have lemon or anything citrusy to squeeze a touch in at the end for brightness?

That sounds yummy. I would probably add kale or chard or the like to the saute at the end with the seafood.

It would be like a really odd version of dirty rice, haha.

Oh, that does sound yummy. Great idea! When you say sauté rice until translucent, do you mean cooked or uncooked?

I put it in uncooked and then saute until the uncooked rice is translucent, then add the liquid in and then cook like regular rice, but usually minus a couple minutes in cooking time. I find that it really ups the flavor and allows it to absorb the liquid better - rice ends up fluffier.
