i didn't read all the responses so this might have already been suggested...but KALE CHIPS!! omg, so good, and pretty healthy. just bake big pieces (a little bigger than potato chip size so they don't crumble) of kale til crispy and sprinkle with salt, or even healthier - nutritional yeast. they're awesome.
also, not a green, but pretty healthy, you can sneak/substitute cauliflower into pretty much anything. boil or steam it til soft, blender it til grainy, then you can add it to anything - mashed potatoes, mac and cheese (this is so good with blended cauliflower), smoothies, meatloaf, whatever!
