Kimchi

I've been eating kimchi for a couple of years now but a lot more recently and now three of my kids love it (including my 18 month old) and it's getting expensive to buy! Anyone have a recipe that is not too difficult and doesn't make a huge amount? I'm mostly wanting to make the cabbage kind but would like to try cucumber as well.

I have made this very quick and easy recipe from Tyler Florence and it was ok but I would really like something more authentic. I'll probably make some next week since I have to order Korean chili powder online, I'll let y'all know how it turns out!

Kimchi goes fast in my house too. I'm curious how it turns out. My cousin lived in South Korea for a couple years. She said every Korean family has a different kimchi recipe.
