Small Red Beans

Do you have to boil out a toxin when cooking from dry? Like kidney beans? Thanks!

I've never heard of having to boil out toxins in dry beans...I soak dry beans overnight, rinse, then refill with water, season, and bring to a boil and cook until soft.

It's funny you ask. I just bought a bag and was thinking the same thing. No you don't have to as the small red beans don't have the toxin.

I am seeing this new "kidney bean toxin" all over the place. I have never heard of this before. Is it just the dry beans, cause i just bought some?

No major outbreaks have occurred in the U.S. Outbreaks in the U.K. are far more common, and may be attributed to greater use of dried kidney beans in the U.K., or better physician awareness and reporting.

NOTE: The following procedure has been recommended by the PHLS (Public Health Laboratory Services, Colindale, U.K.) to render kidney, and other, beans safe for consumption:
* Soak in water for at least 5 hours.
* Pour away the water.
* Boil briskly in fresh water for at least 10 minutes.
* Undercooked beans may be more toxic than raw beans.

Thanks, guys! I soaked for about 4-5 hours, rinsed them, and then cooked them in my crock pot on low for about 7 hours. They were perfect!

What is this toxin? I've never heard that before! I've always been told you have to soak beans overnight or do the quick soak boiling method, but that it was just to take out some of the stuff that causes gas and stomach irritation, not that there was anything toxic. The only beans I ever cook from dry are small red kidney beans for red beans and rice, and I always just boil them then let them sit for an hour and then rinse and use.

You can google 'kidney bean toxin' and you will find the name. What you have to do is soak beans for minimum of 5 hours, put in fresh water and boil for 10 minutes. Rinse again and start with fresh water and cook as usual. This get enough of the toxin out that fully cooking takes care of the rest.
