Freezer Meals

I'm lookingto stock up my freezer for the fall when I have a new baby and would like to get going soon. what are your suggestions?? I would love ideas that can incorporate one prep time but multiple meals.

So far I have thought of

Shepherd's pie
lasagna
mousaka
spagehetti sauce (or casserole - even better)
enchilatta

we don't typically eat freezer meals so this is all new to me.
TIA

Chili is great. You can make a bunch of it and freeze it in individual containers for quick-grab lunches.

Some other things I make regularly:
waffles - place on a cookie sheet, and separate layers with wax paper. Freeze an hour or so, then place in a ziploc bag.
sausage balls
cookie dough (roll into balls and freeze before placing in a ziploc bag. Super quick and easy)
I make my own enchillada sauce, so I freeze that and shredded chicken (freeze the chicken broth too for soup later!). Thaw out for a day in the fridge and it makes super tasty (and quick) enchilladas.

That's all I've really tried so far. Good luck!

Re: Freezer Meals

http://crockpot365.blogspot.com/2009...up-recipe.html

i made a half batch of this creamy potato soup and it was soooo good. i just topped it with green onions and cheddar cheese. you can freeze however much you want in a ziploc bag (lay on cookie sheet to freeze then you cake set it up sideways or whatever w/ it nice and flat, and it will thaw more quickly)

i also freeze crockpot refried beans and use those for burritos or quesadillas or just eat them

Re: Freezer Meals

We do waffles, too - DH loooves freezer waffles. We also do breakfast burritos - egg, cheese, maybe some ham/sausage/bacon/spinach/etc. Just make sure the filling is pretty dry, otherwise the liquid will make the re-heated burrito kind of fall apart. You could make "regular" burritos at the same time with many of the same ingredients.
I am a big fan of "roast two chickens at one time" - then pull the meat off of one, and freeze in meal-sized bags. This totally saved our butts when DD was born bc I could direct DH to "make pasta, add veg and defrosted chicken, serve"

My family thanks you from the bottom of their (tired of scrambled eggs for dinner) hearts!
