chick peas for hummus. I'm working on this weeks meals today. I played hooky from work because my baby started school today and I wanted to be available if needed and I have got to get caught back up this week.

I have a lot of short ribs in there right now. We tried to grill them but that didn't work out so well. So I'm trying to get the meat from 'charred and rare' to 'edible.'

I made spaghetti sauce in mine for dinner tonight. It was delicious and there is plenty left over for lunch tomorrow since DH will be off work!

I'm loving my crock pot this week. DH has been cooking lately since i have no time but I'm slowly getting back to it with slow cooking.
This week I've done spaghetti (diced tomatoes, black olives, mushrooms, green peppers, onion, fresh garlic, green chilis, 1lb ground beef) crocked for 6 hrs, added 1 box of whole wheat spaghetti noodles (already cooked) topped with cheese, crock for another 30 minutes. Makes enough for two nights worth, i freeze half. Two nights ago i did pulled pork. Boneless pork ribs, a bottle of beer (i used shock top orange beer, its all DH had), sliced onion, bottle of bbq, crock for 7 hrs. Served on toasted Hawaiian rolls with some baked beans i whipped up. Today i have two chicken breasts, a jar of salsa, black beans, corn, spinach, chili powder, cayenne pepper, cilantro, and garlic in. Crock for 6 hrs or so. I'm going to shred and top with pepper jack cheese at the end and serve over rice.

I have chicken with broth in it to make chicken and dumplings. After the chicken cooks all day I take it out and shred it bring the broth to a boil and cook the dumplings and add the chicken back! Takes less than 10 minutes to finish it.
