Canners, I need your help
Just got 2+ gallons apples from my SIL. She said they're from a neighbor and best for canning or baking. I just happen to have my moms canning jars and pot here. We're not big applesauce eaters and I don't bake many pies. What else can I do with them? Is there a way to can them in big chunks like canned pears?

To make stuffed french toast. or just eat it as is. Don't have to make pie with it. whatever you do if you don't use the peels (you want to for apple butter) you can use the peels and cores to make apple jelly. http://ayearwithoutgroceries.blogspo...ake-jelly.html . You can add pectin if its too runny- use the consistency test it tells you to use. Every time I have made this its a bit runny. I don't add pectin though because we don't mind it not being jelly thick. I do add cinnamon and nutmeg though-mmmm, tastes so good. We use it like jelly and on meat as a glaze. And to give you and idea- 2 cups of juice should get you around 12 oz of jelly. 4 cups of peels with 5 cups of water gets you about 2 cups of juice. That will hopefully give you come idea how many jars you'll need.

Make apple pie filling! You need to peel and core the apples, of course, just like you do making it from scratch. My mom and SIL make it nearly every year. They use the peels for apple jelly afterwards.
If you like apple butter, it's easy to make that, too. Make applesauce first, then spice it, and let it simmer for several hours until it reaches the desired thickness. I make mine in a huge pan in the oven. |
