What is your favorite summer vegetable and what do you like to do with it?

Cabbage

I love to cook cabbage with Kielbasa and then add some sauce at the end made with sour cream, mustard, sugar and salt and just heat through. It is one of my favorite meals.

Tomatoes

A bagel (pref. cinn raisin for me, but I like sweet and savory combined) topped with a slice of tomato, a little onion and a slice of cheese in the toaster oven or broiler until the cheese melts- love this for lunch- could eat it everyday with good tomatoes.

Sweet potato, apple, carrot, and red lentil soup, using sweet potatoes, early apples, and--if they're available--carrots and onions from the farmers' market. The recipe is from Allrecipes and is perfect--doesn't need tweaking.

Tomatoes: I made the small batch of fresh tomato sauce from The New Vegetarian Epicure. I can type it up if anyone is interested (and post the link to the soup from my last post when I'm not on my phone). We actually wound up mixing it with our last 3 cups of homemade spaghetti sauce and 10 homemade meatballs to serve over spaghetti for dinner.
