Pickles
So this may be a silly question but how long do you procecess dill pickles for? I see some recipes (ball and bernardin that say 15 min) but other that say little to no processing (heat cucumbers in brine) and my book says can just put in boiling water and allow the jars to cool. You obviously don't want the cucs to cook or they'll go soggy? I'm confused.

you can't pressure can pickles or they will be soggy yucky. just hot pack them in whatever you're doing (bread and butter, dill, sweet, etc) then cap the jars and put in a waterbath. boil for 10-15mins and then remove and cool. they come out crunchy and perfect.
now, i do a dill pickle and you are not suppossed to eat them for about a month after you can. it gives them time to soak and take on the right flavor. make sure you don't open your jars too soon if you're following a similar recipe or you'll have no so good tasting pickles!

mine says process (boil) 15 mins. If not processing than they need to be stored in the fridge after they cool about 30 mins from pouring the hot brine over them. Then supposed to be eaten within 3 months.

You may want to look up brining or "fermented" pickles. I love to can. But, I love the flavor and crunch of a true dill pickle pulled from the brine. I just fill a large jar everytime I get a batch from the garden. I put mine down in the basement were it is cool. They sit for about a month. They last on the countertop about a week. After that you have to keep them in the fridge.
