Help me make cookies?

I am trying to find a recipe to make shortbread cookies but the one recipe i found says i need icing sugar..i don't have icing sugar so can i skip it? or use regular sugar?.

I dont have eggs either but i have oils,brown sugar,white sugar,flour,milk, alittle baking powder,baking soda,sprinkles.

I would prefer shortbread so i can decorate them for my husbands birthday but anything simple and yummy will do

Re: Help me make cookies?

Icing sugar is just confectioners sugar. What is it being used for? Is it going in the cookie or is it being used for frosting/icing? Supposedly you can blend regular sugar and cornstarch- 1 cup sugar/1 teaspoon cornstarch in the blender and use that. I have tried it for frosting and its just plain gritty. You can try it, its possible my blender just wasn't good enough. The end result needs to be smooth powder to work for frosting. Now if its going in the cookie, I would blend it up and measure what you need. Should work fine for that.

I would use the recipe you found and just blend your white sugar in the blender before adding it.

Re: Help me make cookies?

I don't use icing sugar for shortbread cookies. I just use butter, sugar and flour and follow this recipe: http://www.cooks.com/rec/view/0,1610...241201,00.html Usually I cut it in half, so 1/2 cup butter, 1 & 1/4 cups flour & 1/4 cup of sugar. Very easy & one of my husband's favourites.

Egg replacer

2 tbsp ground flaxseed mixed with 3tbsp water, let it sit for 10 minutes works great.

If its just one egg you need, you can sub a teaspoon of vinegar. If you need 2, you can use a teaspoon of vinegar and a tablespoon of mayo..the real kind.
