Do you ever use coconut flour? Those recipes always call for a lot of eggs because the flour is so dry. I make cheddar garlic biscuits out of it and they are good. I think I got the recipe of off the heavenly homemaker site.

It wasn't quite like normal bread - but it was delicious. I'm curious about the cheddar biscuits. Last week I made crackers with cheddar cheese & coconut flour and they were a hit, too. Cheesecake often uses a lot of eggs. Quiche is a favourite here. Yolks for creme brulee and whites for coconut macaroons. |

Homemade mayo, use the whites for meringues (?) so not super heathy but yummy! Also one of our FAVORITE dinners around here is chile relleno casserole I can send if it sounds good to u
its not spicy, my girls love it too! Also I really second creeps you can fill with any endless variety of sautéed veg I throw some cream cheese in at the end it makes it so creamy and yummy and feels more like a filling... Kids call it a burrito and love those too. Ooh also crime brûlée! Mmmmmmmm!!!

1 dz eggs
1/2 c. flour 1 t. baking powder 1/2 t. salt 1 pint cottage cheese 1# jack cheese (though I've used cheddar and it's also delish) 1/2c. melted butter (I have reduced, even omitted this and don't notice a big diff) EITHER 2 cans diced ortega chiles OR 2 cans whole ortega chiles For diced chiles, mix all ingredients, pour in greased 9x13" pan and bake 35 min at 350 till knife blade in center comes out clean. For whole chiles, mix all ing except the chiles, pour half the mixture in the pan, layer the chiles cut open to lay flat, top with second half of egg mixture, bake as above. Yummy with salsa, sour cream and/or guac... you can also do a "swirl" of salsa on top when it's raw and bake the salsa "vein" in

Also I just recently did a savory baked egg casserole with bread cubes, whatever b.fast meat, and whatever veggies you love, cheese (optional of course) and do a french toast-type batter with beaten eggs and milk, S&P. Pour the egg mixture over the bread cubes/meat/veggies and let sit for anywhere from 1/2 hr to overnight, top with cheese, bake-YUM!
