Sharing my chewy granola bar recipe
adapted from http://amy-newnostalgia.blogspot.com...nola-bars.html
3 Tbsp canola oil 1/2 cup loosely scooped brown sugar 1/4 cup honey or corn syrup 1/4 tsp cinnamon 1/4 tsp nutmeg couple pinches of salt at least 3 cups but no more than 4ish cups of any combo of leftover granola, rolled oats, wheat germ, ground flax, nuts, raisins, rice krispies, cheerios...anything. I have been using 2 cups oats, 1 cup rice krispies, 1/4 wheat germ, 1/4 cheerios because that's what I have on hand. combine dry ingredients, spices, and salt in a bowl on the stove combine the oil, brown sugar, corn syrup or honey over medium heat, stirring occasionally. Bring to boil and stir til sugar dissolves (not long like a couple minutes). Pour over dry ingredients and mix well. Press firmly into glass baking pan (I have been using my smallest rectangle pyrex), let set in fridge for a while and cut into bars. ---- I just wanted to share because these are so good and have been just what I had been looking for. Something relatively healthy (although a bit sugary) to grab as an afternoon snack or send with my husband if he wakes up to late to have breakfast. I know I can up the healthy factor and staying power a bit more with flax seed and nuts and maybe even a little protein powder. I have made 3 batches this week. The way I cut them is into like 1 inch by 2 inch bars and I get about 16 of them in a pan. We LOVE them. Every other granola bar recipe I have tried turned out more like a crumbly mess but these are actually chewy! I individually wrap them in plastic wrap and store them on the counter. If you don't like the spices, leave them out but I love them. I guess the key is ratio of sweet "syrup" to dry ingredients and you could use pretty much anything you want. hope this helps someone!
