Lentil Recipes
I have half a bag of green lentils in my pantry and I'm looking for new recipes. I've done a shepherd's pie with them and soup, but looking for something else. Must be dairy free as DS1 is allergic.

We make them in the crock pot or on the stove and toss in cilantro onion and tomato drain and make taco's out of them. Instead of ground beef put the lentil shredded cheese, lettuce tomato, and sour cream they are delicious!

We do taco style lentils and rice. I cook the lentils with taco seasonings add rice and taco fixins (tomatoes, lettus or whatever you normally put on your tacos) and serve with tortilla chips. It's a big hit at our house!

Usually I just make a really thick soup...pretty much straight lentils, with chicken broth and some pieces of chicken, carrots...whatever vegetables I have laying around.

I put then in almost anything you would put ground beef in. sloppy joes (sloppy lennies), spaghetti sauce, tacos like pp mentioned even tater tot casserole!

I put them in brown rice. Actually I like to mix 3-4 grains/lentils together when I make the rice. I also put in chicken broth, shredded carrot, onion, and celery. It is so good. I never use reg. brown rice, always Jasmine.
You can cook the lentils and rice for the same time. I put the rice/grains/lentils(about 3T) together to make a cup and add liquid accordingly.

This was really yummy!
Coconut Curried Green Lentil Soup ingredients: 2 tablespoons coconut oil (or unsalted butter) 1 tablespoon good quality curry powder, freshly ground 2 teaspoons minced garlic 1 large sweet onion, chopped 5 cups of vegetable stock or water 1 1/2 cups green lentils, rinsed 1/2 cup coconut milk 1 teaspoon sea salt garnish options: fresh chopped chives yogurt pinch of curry powder Melt coconut oil in a large stockpot over medium-high heat, then add curry powder, garlic, and onion. Saute for about 3-4 minutes on medium heat, stirring often so the garlic doesn’t burn. Add vegetable stock and green lentils. Bring soup to a boil, then partially cover and reduce heat. Simmer for between 20 and 50 minutes (or until lentils are tender; mine typically take about 50 minutes). Once the lentils have finished cooking, remove soup from the heat and stir in the coconut milk and salt. Puree the soup using an immersion blender or regular blender (in batches if using regular blender) until it is as smooth or as chunky as you prefer. Serve immediately with your choice of garnish.
