Another plum question

So we were given a way over abundance of plums. I was plannign on processing some tonight, so I submerged a bunch in the sink to wash them... Then my kids needed me, and I totally spaced the plums in the sink... For like 2 hours... About half of them started to get split skins because they absorbed the water (or something like that, I'm guessing). I've never put up plums before, but everything I read online says that you shouldn't can plums that have split open, but do you think that these ones are okay? THey only split open because of water, they didn't split on the tree and have bugs/dirt in them... Or is this now a no-no? I'm going to stick them in the fridge tonight, I doubt anyone is on so late lol. So I guess really, the question is, will they be safe to can tomorrow? Or even freeze? Or should we just plan on eating A TON of fresh plums over the next few days?

Re: Another plum question

To be honest, I have yet to do plums. Wish I could get my hands on some. As far as I know, the splitting they say is a nono, is when they fall, ect. Chance of pests and bacteria. Like apples or pears that have fallen. They will prob split when canned anyhow, right? You doin them whole? If it's a no go for whatever reasion, there's jam, jelly, preserves, juice, and dehydrateins. Mabye even a pie filling? I sure wouldn't waste them!

I made BBQ sauce with them last night. I'm going to make fruit leather, jam, and probably more BBQ sauce with the rest. We got 71 pounds from our land lady, so I have a lot to do lol
