Trying my hand at homemade tamales.
We're (mostly) vegans and my parents (I'm planning to share) are vegetarians. Any suggestions for filling?

a traditional tamal filling is rajas with or without cheese.. not sure if you want to sub vegan cheese for that, i've never tried it myself.. but it is sooo yummy....it's fire-roasted poblano peppers, peeled, sliced into strips or diced.. in a pan you'll saute some onion, when caramelized you add tomatoes, add salt, let it cook down a bit then add the peppers, cook down again, if needed, so that it's not so liquidy.. taste for salt et voila.. rajas! if you slice the peppers then you'll want to have the onions and tomatoes in slices as well, if diced then dice everything else.. hth..

Corn and green chiles are good. I don't like cheese is my tamales so I never use it even when I wasn't veggie. Black beans are good and winter squash. I don't know if you can get fresh masa where you are or if you are making your own but if you are making it I suggest using corn oil.
