Super easy pumpkin muffins

I got this recipe from my pastor's wife and thought I'd share it because it was so easy and tasty.

1 spice cake mix and 1 big can of pumpkin. Makes 24 muffins. Bake on 350 for about 20 minutes. However it only makes 22 muffins if you eat a bunch of batter Pretty healthy and low fat.

She put cream cheese icing on hers which was super good but I didn't to keep the calorie count down.

Sound yummy!

Is it the larger of the two cans of pumpkin at walmart or the great big can that is harder to find? Do you recall the ounces on can?

It is the 30 oz can. It was the bigger of two I saw at walmart.

I just did the same with the betty crocker gluten free vanilla cake mix for DD. We added cinnamon and nutmeg to spice it up a tad. Yummy!

This recipe is actually a Weight Watchers recipe from years ago. I've been making them for a long time! I also add raisins to mine. They're delish. They freeze really well too. Reheat on a cold winter morning with a cup of coffee---yum!

You can also mix a box of chocolate cake with a can of pumpkin. Like cake but healthier! They freeze well too so you can keep them in the freezer for when you need a sweet treat. I like making mini chocolate ones to freeze.

And I think the can I use is only 15oz? It's not a giant one, just a normal size. The batter is a bit stiff and you might think you need more pumpkin but you don't!

This is probably a dumb question, but do you add the regular spice cake mix ingredients (eggs, oil, etc? ) in addition to the canned pumpkin or just the cake mix and pumpkin?
