Help me make a chicken casserole.. PLEASE!
I have chicken, rice, cheddar cheese and brocoli. I thought I'd make a chicken casserole. But all the recipes I find call for a cream of chicken or cream of mushroom soup.. and I don't have any.
Any ideas on a from-scratch sauce for the casserole. Can I just make a cheese sauce using flour milk and cheddar cheese? How much would I make. How much rice would I use? What is the liquid to dry rice ratio? Thanks! God bless!

I made one just the other day. I precooked everything and just blended it together. I cheated and did use a can of cream of chicken but you could just make a chicken gravy and add the cheese to it.

When we didn't have any Cream of Chicken I made homemade gravy, seasoned it and it worked perfectly. It was so, so good.

This is what I do to make a creamy chicken sauce: Finely dice onion (maybe 1/4 cup; optional), saute in 2 tbsp. butter, add 2 tbsp. flour, stir and cook for 1 minute. Slowly stir in 1 cup milk & 1 cup chicken broth (or water + bouillon), bring to boil, reduce heat and simmer until slightly thickened. Add salt + pepper to taste. Stir in cheese if you want it to be a cheesy sauce.
Then I add this to rice or noodles, diced chicken, any other ingredients I feel like using, and bake until hot. ETA- this is the recipe that I based my sauce recipe on: http://mealplanningwithconnie.blogspot.com/2010/04/condensed-cream-of-chicken-soup.html
