GF Vegan freezer meals??

I'm trying to keep us from eating out, which wasn't a problem before I got pg, but now...

Anyway, I though if I could put a couple things together in the times when I DO have energy that might help... anyone have any recipes/resources to share?

I am a huge fan of the Happy Herbivore. She has $5 meal plans which have been helpful when I need ideas. They come with shopping lists and everything. All of it might not be freezer stuff but most are super easy and quick.

I second Happy Herbivore! She has some great books too. Check out Everyday Happy Herbivore, all the recipes are 30 minutes or less. Also, if you own a crock pot then check out this website for some easy recipes. I make big batches of this and then freeze it for days when I'm too lazy to cook. We replace the bulgur wheat with TVP.

You could freeze pre-cooked lentils and a stir-fry mix pretty easily! I do that often.

How do you do the lentils? I've actually never frozen a meal or things like lentils, I need to work on it!

I cook a bag of lentils in the crock pot (depending on what I want them to taste like, I change up the seasoning - sometimes curry, sometimes for tacos, etc) until they're soft, usually 6-8 hours on low. Then I divide up and freeze in freezer bags portioned out. You can do this with any dried bean or lentil/split pea.

Perfect... so how do you reheat them? I feel like this should be easy for me to figure out, but I'm feeling... not so smart... on this one, lol
