We did ok....not great nutritionally, but hey

Breakfast: The boys had homemade raisin and brown sugar oatmeal; I had a piece of banana bread out of the freezer and 2 pieces of sausage.

Lunch: Oldest DS had a baloney and cheese sandwich with some baked beans; youngest DS had chicken ravioli and baked beans. I has beef stew out of the freezer.

Supper: DH and youngest DS (oldest DS spending the night with my parents) split a can of chicken noodle soup, and DS had added applesauce and a few butter cookies; I had *ahem* 2 wienies topped with cheese and a squirt of ketchup.

Tomorrow morning I am going to try to get some baking done, so I will be doing chocolate chip pumpkin bread and pancakes, homemade raspberry syrup (for said pancakes) and maybe a loaf of bread to slice and freeze if my rice flour holds out!!!

i want to join! my freezer is full of recent meat (i stocked up when i got my financial aid) but the pantry and staples could use clearing out... plus money is super tight right now, and i need to save every penny i can. i just ordered my bountiful baskets produce basket, so i should be mostly good for a while, aside from some things like eggs, cheese, milks (my mom drinks cow, ds drinks soy).

tonight we had pork chops, chicken rice (a family recipe from my moms side ) and a salad

my problem area is my breakfast/lunch/snacks on school days. about half the time im prepared, the other half i end up in the cafeteria... and i cant afford that!

and thanks... i was about to head to bed, and y'all inspired me to prep my food for tomorrow

breakfast is a yogurt and some apple slices, lunch is left over salad from tonight, with canned chicken and feta cheese on top, cucumber slices and some broccoli on the side, and a pudding cup for dessert

I haven't been to the store since I grocery shopped Friday. Sunday morning I made oatmeal with apples and cinnamon. Last night I made sopa and beans. Tonight we had sausage cabbage soup. Lunches are leftovers for my husband and me and school lunch for the kids.

Did you guys know cabbage can last a long time in the pantry? I think I bought mine the middle of last month.

THAT'S were we struggle a lot, too!!! My youngest can't have dairy,so that takes MOST of the easy things out! No grilled cheese, mac and cheese, cheese grits, etc..... My oldest is a cheese fiend, so I usually wind up making two different lunches

I'd love the cabbage and sausage soup recipe!! And I love how well cabbage holds up in the fridge, and I do believe if you have a basement it can last there for a while, too....

I'm joining in. We have no shortage of food, but it all requires planning & I've been terrible about waiting until he last minute and getting convenience food or take out.

I'm in!

Bfast; Cereal w/milk, sausage
Lunch: Kids eat school lunch, dh had the last of the rice/beans/kielbasa, and I had cream of wheat w/raisins.
Dinner: I had a frozen pizza w/fruit and the kids/dh had chicken nuggets with fruit.

Not a good nutrition day, but I'm sick as heck and don't feel like cooking.

Cabbage and sausage soup from Allrecipes


1 tablespoon vegetable oil
1 onion, chopped
1 pound smoked sausage, sliced
3 cups water
1 head cabbage, cored and coarsely chopped
3 carrots, sliced
3 stalks celery, sliced
1/3 cup uncooked long grain white rice
1 (15 ounce) can red beans, with liquid
1 (8 ounce) can tomato sauce
1 (28 ounce) can crushed tomatoes
2 cubes chicken bouillon
salt to taste
1 bay leaf
1/2 teaspoon crushed dried thyme


Directions said to sauté the onions in the oil. Since my husband is allergic to onions I skipped this step. Instead of using bouillon cubes and water I used homemade chicken broth. I subbed cooked pinto beans and brown rice instead of white rice. It serves 8. I had enough for 2 meals.

I also only used 12 oz of turkey sausage.

This morning for breakfast I had quesadillas with a slice of lunch meat.

Lunch was yesterday's leftover soup. Tonight I think will be lasagna with homemade garlic bread.
