Chili- share your recipe!

What's your favorite (ease, taste, etc) chili recipe? Can be veg or meat, canned beans or dried

I have a pressure cooker, crock pot and regular stove so I'm open to whatever you have! Please share!!!

2 cans of speg. sauce (at least 1 of them spicy)
1 can kidney beans
1 can other big bean
1/2 beer (whatever kind I don't like to drink that made it's way into my house)
1 onion, chopped finely
2-3 celery stalks, chopped
1 large zucchini, chopped
2-4 carrots, chopped
2-4 red, green, yellow or orange peppers, chopped
1 can mixed beans (optional - depends how much room is left after the veggies)
other veggie ends from the fridge that should be used up (optional)
2-3 tbsp chili powder
1 tsp each garlic, onion powder, pepper, paprika... (whatever spice I fancy at that moment)
dash or two of hot sauce (sometimes I save this til after kids portions are out)

Put it all in a big pot or slow cooker & heat for the afternoon.

Serve in bread bowls, with toast on the side or with some nacho chips.
Top with grated cheese & sour cream (& hot sauce if not included in the cooking part)

Chili = easy in my house. I use the Simply Organic packet, some tomato sauce and a pound of ground beef. We serve it with shredded cheddar and sour cream.

1 lb of ground beef or turkey
1 onion
3 cans pinto beans
1 can kidney beans
1 can black beans
2 cans diced tomatoes
chili powder
taco seasoning

Brown meat with onion, throw everything in crockpot. Enjoy.

Hubby makes chili every week & eats it for dinner all week. (Except no longer since he won't be working out of state anymore! Yay!)

He sautes together:
1 onion, chopped
1 bell pepper, chopped
6 cloves garlic, minced

Then he adds
1 1/3 to 2 2/3 lbs. ground beef
and cooks it till it's no longer pink.

Then he adds
1 27-oz. carton Pomi chopped tomatoes
1 27-oz. carton Pomi strained tomatoes
1 jar of Knudsen's spicy vegetable juice
2 10-oz. cans original Rotel
1 batch homemade chili powder (from Joy of Cooking--it's ground chiles, Mexican oregano, cumin, and cayenne, toasted together)
1 to 2 lbs. cooked kidney beans (we use the slow cooker for those)
and lets it simmer for several hours before adding salt to taste.
Amelia, married to Bear since 12/31/04; our daughter Rowan was born 8/6/09; our daughter Sapphira was born 8/17/12; due with DD3 6/17/15 (but after one two weeks late and one three weeks early, I'm not expecting a due-date baby!)

Haha, I posted the same thread the other day but it never took off

Here's my "special occassion" chili:

Li Hing Chili
˝ pound ground beef
˝ pound ground pork
1 large onion, chopped
4 cloves garlic, minced
1 tablespoon olive oil
1/2 tablespoon crushed dried jalapeno
2 poblano peppers, diced (may substitute 1Tbsp dried ancho)
1 teaspoon EACH kosher salt and cocoa
2 teaspoons cumin
6 whole paste tomatoes, peeled, seeded, and chopped
˝ cup stout (optional)
1 can kidney beans
1 teaspoon chili pepper water
1 tablespoon li hing powder

Brown beef, pork, onions, and garlic with oil in 3-quart saucepan.
Stir in all but li hing powder and chili pepper water.
Slow Cooker:
Add to slow cooker and cook on low 4-6 hours, adding final two ingredients 10 minutes before serving.
Bring to boil; reduce heat. Simmer uncovered 30 to 45 minutes, adding final two ingredients 10 minutes before serving.

Serves 6.

For "cheater chili" I just dump browned hamburger, kidney beans, and chili powder in a pot of tomato sauce

Chili Beans Recipe
3 Pounds of lean hamburger or ground chuck meat
5 Table spoons of chili powder
5 Table spoons of paprika
1 Big Onion chopped
1 Table spoon of garlic powder
4 Table spoons of salt
1 Big can of Hunt's Diced Tomatoes
1 Big can of Hunt's Crushed Tomatoes
1 Small can of Hunt's Tomatoe Sauce
1 Tea spoons of chili flakes
1 Half cup of ketchup [ Optional ]
1 - 3 Teaspoons of red pepper or Kiann pepper [ Optional ]
4 Cans of pinto or your Fav beans

*** Healthy way of cooking meat suggestions PLEASE READ!

This way of cooking meats is much better for you and taste better too!
Our family boils our meat in a big pot separately in water such as hamburger or what ever meat for your chili!
We boil the meat in water for about 1 hour or until the meat is fully cooked.
When done, we then use a colander and pour off the hot greasy water off into a bowl then you can
discard out doors somewhere NOT pour your greasy water off into your kitchen sink!
“Over time pouring grease or greasy water off into your kitchen sink drains will clog your drains”
Now you have your meat cooked and a big percentage of your meat cooked without all that bad grease!
Now you have your meat poured and drained in a bowl.

Cooking your meat by this cooking method above, this great chili won't give you any heart burn!

Now you have your meat cooked with out all that bad grease and set aside.
In your big pot, put in your chopped onion and saute the onions a little on medium high heat.
Add your tomatoes and tomato sauce, chili powder, paprika, garlic powder, salt, red pepper/Kiann pepper and beans in with your onions in the pot.
Now stir all in pot and combine the spices and ingredients well. Now add the cooked, healthy cooked meat to the pot on medium high heat for 15 mins.
After stirring well all ingredients on medium high heat for 15 min.s turn heat to medium heat level and cover and let simmer for 45 min.s and serve.
The next day is even better!

The chili I make is from work, do its a massive batch. When I make it at home, it usually so I can freeze a bunch of pass out to friends. Get the big #10 size cans at Costco or a restaurant supplier like Cash and Carry.

3 bell peppers, diced
2 onions, diced
1/4 cup minced garlic
3lbs ground beef
1 #10 can diced tomato (don't drain)
1 #10 can chili beans (these are just preseasoned pinto beans. If you can't find them, use pinto and bump up the seasonings)
3 regular size cans black beans, drained and rinsed
Chipotles in adobo sauce (as much as you want)
12 oz tomato paste
1/4 cup chili powder
1 Tbsp smoked paprika
1 Tbsp cumin
1/4 cup brown sugar
2 Tbsp beef stock base (its a thick paste from the soup aisle. I like Better than Bouillon brand)

Sauté together peppers, onion and garlic just until softened. Add beef. Cook until beef is cooked through. Add everything else. Stir well. Simmer at least half an hour.

This is the chili recipe I make most often. It's from a Betty Crocker cookbook.

1 lb. ground beef
1/2 cup chopped onion
Diced red bell pepper (optional)
1 clove garlic, chopped
1 (15 oz.) can diced tomatoes, undrained
8 oz. can tomato sauce
1 tbsp. chili powder
3/4 tsp. cumin
1/4 tsp. salt
1/4 tsp. pepper
1 can beans (chili or pinto beans)

Cook beef, onion, red pepper & garlic in 3-quart saucepan until beef is brown; drain. Stir in remaining ingredients except beans. Heat to boiling; reduce heat. Cover and simmer 1 hour, stirring occasionally. Stir in beans (rinse and drain the beans first, unless they're chili beans). Heat to boiling; reduce heat. Simmer uncovered about 10 minutes, stirring occasionally, until desired thickness. Serves 4.
