just did a new and super easy recipe today. I rinsed them and patted them dry in a colander. Then put them in a dry, non-stick pan on med/med high til they start to pop and turn golden (stir them a bit). Then add a tiny bit of olive oil and brown sugar. Stir to coat until sugar is melted and then sprinkle with kosher salt. SO much faster than drying overnight, cooking in oven and so forth. Took like 15 min total.

I melt about a Tbsp of coconut oil on a cookie sheet, stir the seeds around in it, then sprinkle with sea salt and bake 325 for 35 min.
I find it's easier to separate the seeds from the pulp as you go, rather than soaking them or letting them dry in the pulp. I scoop out a chunk, squeeze out the seeds, and toss the pulp.
