For my dairy free dc kiddo, I used chicken broth instead of milk and butter. The kids liked them just as well if not better.

Just whip the potatoes with a small amount of the cooking water. No milk (substitute) or butter needed. Just put gravy (or butter) on them when served.

If you have chicken broth it makes awesome mash potatoes too. I prefer it to milk.

There is a fleishman's that is soy and dairy free, think it is the light.

We use Earth Balance vegan butter and the potato water...everyone loves them!

I use Earth Balance vegan butter and original soymilk, with a little salt and pepper. Using stock sounds good, I wonder if vegetable stock would be just as good.

I use yogurt, might work depending on how sensitive she is. I can never get the creamy flavor with just broth/potato water, and can't stand the taste of nut/grain milks.
