vegetarian/vegan cooking
Looking for recipes and sites. Dh wanted to try a juice fast and on day 3 there are just certain things he can't stomach any more- no hot food is one of them. But since I have already bought all the stuff I am re-working the menu to use it up, just not in juice form. Anyway, after the 10 days is up he mentioned only adding meat back in 2 days a week. Before marriage that is how I ate, but I have been married 9 years and can't even remember what I ate. For me I was perfectly fine just eating side type items (my meals always looked liked everyone else's minus the meat)- dh is not. It needs to look like a complete meal- that might be different after 10 days of a mostly raw diet. To make things even more fun- he will not eat tofu, tvp, beans or lentils. He will eat a small amount of beans. And we are nut free due to dd's allergies. Any ideas?
oh- he hates chili, even with meat.

Re: vegetarian/vegan cooking
Will he eat chickpeas or quinoa? Lots of options there.
You could try incorporating beans into hidden things to see if he will eat them: burritos/tacos or chili?

Re: vegetarian/vegan cooking
Husband and I didn't like tofu much until I learned how to press the water out just right, and cook it right. Now we love it, but my love is much more then his. My suggestion is get some vegan cookbooks. So many of them have substitutions for common allergies like nuts, soy, and gluten. My family switched to a vegan diet in the spring and so far no complaints from dh or the kids. We only ate meat like 3 times a week before, but now the only meat dh or the kids get is at family parties, so not very often.
I have Chloe's kitchen, Vegan on the Cheap, Everyday Happy Herbivore, and The Vegan Table. I make all my meals out of these cookbooks.

Vegetarian times provides some really nice recipes for us. I wouldn't throw out the idea of beans and lentils just yet. Some recipes use them and they do not turn out "beany" by any means. We also love these http://chubbyvegetarian.blogspot.com...meatballs.html just make sure you don't add all the mixture or you will have soggy balls. And use parchment, you'll be so glad you did. |
